  • 1/2 of a small shallot, finely diced
  • 1 8-oz container Ciliegine, halved
  • 1/4 cup chopped parsley
  • 1/4 cup chopped basil

Vinaigrette

  • 1 tbsp champagne vinegar
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • flaky salt, to taste

Instructions

  1. Combine Salad Ingredients: In a large bowl, add the halved cherry tomatoes, chopped nectarines, very thinly sliced cucumber, finely diced shallot, halved ciliegine mozzarella, chopped parsley, and chopped basil. Gently toss to mix the components evenly.
  2. Prepare Vinaigrette: In a small bowl or jar, whisk together the champagne vinegar, lemon juice, olive oil, honey, and flaky salt. Taste the dressing and adjust the seasoning with more lemon juice or honey if desired to balance acidity and sweetness.
  3. Toss Salad with Vinaigrette: Drizzle the prepared vinaigrette over the salad ingredients. Toss everything thoroughly to ensure all components are well coated with the dressing.
  4. Serve or Chill: Serve the salad immediately to enjoy its fresh flavors, or refrigerate it for up to 1 hour to allow the flavors to meld together.
