Ingredients

Units Scale

Cheese Circles

  • 2 cups Monterey Jack cheese, shredded

Beef Mixture

  • 16 ounces ground beef
  • 1/2 medium onion, sliced
  • 1 bell pepper, sliced
  • 1 tsp Worcestershire sauce
  • 4 ounces cream cheese
  • Salt and pepper to taste

Instructions

  1. Prepare Your Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Cook the Beef Mixture: Heat a skillet over medium-high heat. Add the ground beef and break it apart with a spatula. Once the beef starts browning, add the sliced onions and bell peppers. Cook until the beef is fully browned and the vegetables have softened, about 5-7 minutes. Drain excess grease from the pan to keep the rolls from becoming soggy.
  3. Season and Add Cheese: Return the skillet to medium heat and stir in Worcestershire sauce, salt, and pepper. Add the cream cheese and stir continuously until it melts and fully incorporates. Remove from heat and set aside.
  4. Create Cheese Circles: On the prepared baking sheet, place 8 evenly spaced circles of shredded Monterey Jack cheese, about 1/4 cup each. Leave at least 2 inches between circles as the cheese will spread. Bake in the preheated oven for 8-10 minutes or until the edges turn golden and the cheese looks lacy.
  5. Assemble the Roll-Ups: Remove the cheese circles from the oven and allow them to cool just about 1 minute, until pliable but not too hot. Quickly place about 2 tablespoons of the beef mixture onto each circle, then carefully roll or fold the cheese around the filling to form a roll-up. Let them cool for 2-3 minutes to set their shape as the cheese hardens.

Notes

  • For best results, work quickly while the cheese is still warm and pliable during assembly.
  • Drain the cooked beef mixture well to avoid soggy roll-ups.
  • You can prepare the vegetables ahead of time to speed up the cooking process.
  • Use parchment paper on the baking sheet to prevent cheese from sticking and ease cleanup.
  • Feel free to customize the filling by adding mushrooms or other low-carb vegetables as desired.
